adobo, the tantalizing dish of chicken and/or pork marinated in oil and vinegar spiced with black peppercorns, garlic, and bay leaf? Or maybe sinigang, the hearty savory sour stew that warms one right up better than any chicken noodle soup I've ever had? Both have their supporters claiming one or the other best represents the cuisine of the Philippines and deserves to be considered the national dish.
